This recipe isnโt just a meal; itโs a celebration of South African roots, hearty traditions, and home-cooked love. It brings together rich, tender stewing beef, a medley of vibrant veggies, and the unmistakable warmth of domboloโa traditional steamed bread that’s soft, slightly sweet, and the perfect partner to soak up that rich, saucy gravy.
Beef Stew with Dombolo

Ingredients
For the Beef Stew:
- 20ml (4 tsp) olive oil
- 1 onion, chopped
- 3 carrots, peeled and diced
- 2 mixed bell peppers, chopped
- 2kg stewing beef, cut into large chunks
- 1kg Food Loverโs Potjie Potatoes
- Fresh chillies, chopped (optional, to taste)
- 1.5L (6 cups) beef stock
- 30ml (2 Tbsp) Worcestershire sauce
- 15ml (1 Tbsp) Six Gun Spice
To Thicken the Stew:
- 45ml (3 Tbsp) corn flour
- 45ml (3 Tbsp) Rama margarine or butter, melted
For the Dombolo (Steamed Bread):
- 250ml (1 cup) cake flour
- 20ml (4 tsp) baking powder
- 1 carrot, peeled and grated
- 60ml (ยผ cup) Rama margarine or butter
- A little water, if needed
Directions
1. Start the Stew:
Heat olive oil in a large pot over medium-high heat. Add the chopped onion and sautรฉ until golden. Stir in the carrots and bell peppers and cook for about 5 minutes.
2. Brown the Beef:
Add the stewing beef in batches, browning each side well. This step locks in flavour and creates depth.
3. Build the Flavour:
Add the potatoes and fresh chillies (if using), then pour in the beef stock. Add Worcestershire sauce and sprinkle in the Six Gun Spice. Stir well.
4. Simmer to Tender Perfection:
Lower the heat and let the stew simmer gently for 2ยฝ to 3 hours, stirring occasionally, until the beef is melt-in-your-mouth tender and the vegetables are cooked through.
5. Thicken It Up:
In a small bowl, mix corn flour with melted margarine or butter. Stir this mixture into the stew and cook for another 10 minutes until the sauce thickens slightly.
Make the Dombolo:
- In a mixing bowl, combine the flour, baking powder, and grated carrot.
- Rub in the margarine or butter until the mixture resembles coarse crumbs.
- Add a splash of water if the dough feels too dry โ it should come together smoothly but not be sticky.
- Form into small balls or place spoonfuls on top of the simmering stew during the last 30โ40 minutes of cooking.
- Cover tightly with a lid and do not lift it while steaming โ this keeps the dombolo fluffy and light.
